I love green soup in the winter as a substitute for a cold salad; This recipe from Goop.com is a great one, with an organic broth base, plus broccoli, leafy greens, onions, garlic, leeks and celery. I often modify based on available organic vegetables and my preference for flavor (i.e. coconut oil, shallots, ginger root, turmeric root, cauliflower, carrots) and if you make a large batch, it's great to keep refrigerated and heat as needed for a quick meal. A handheld immersion blender is ideal for blending in the pot. |

This weekend will be her 10th NY Marathon race, and I love that she will be running with her teen daughter this time.
